Warm Fall Salad feat. Basil Lupins
Ok this might be our new favourite bowl… Meet Tarwi’s Warm Fall Salad with Marinated Lupins & Basil 😋 SO GOOD!
Full recipe below (PS feel free to swap the butternut squash for pumpkin 🎃 if you still have leftovers from Halloween!)

🍴 Serves: 2 portions
🥗 Ingredients:
cooked broccoli (about 1 bunch)
1/2 butternut squash (cut in cubes)
4 tbsp olive oil
1/2 tsp paprika
1/2 tsp salt and pepper
1/2 tsp dried mix herbs (thyme, rosemary, oregano, lavender)
Tarwi Marinated Lupins & Basil
1/2 avocado
3 tbsp pomegranate
🍶 Dressing:
3 tbsp olive oil
3 tbsp apple cider vinegar
salt and black pepper
🥣 Method:
1. Preheat the oven to 180ºC.
2. Toss the pumpkin with olive oil, paprika, mix herbs, salt and pepper. Spread it on a baking tray, and bake for 20 minutes. Remove from the oven, stir well, and bake for a further 7-10 minutes until golden.
3. On a plate place the cooked broccoli, the roasted pumpkin, the Tarwi Marinated Lupins, avocado and pomegranate.
4. Shake the dressing in a jar and drizzle over the salad.
5. Enjoy!
