1 Dressing: 3 Sides

🥕 Ingredients:
1 broccoli head
6-8 medium carrots
500 gr potatoes (parboiling)
2 olive oil (plus extra for roasting the veggies)
1 garlic clove (mince)
salt & black pepper
1/2 tsp dried herbs (thyme, rosemary, oregano, lavender) fresh coriander
🍶 Dressing:
1 Tarwi Lummus Original
3 tbsp olive oil
3 tbsp apple cider vinegar
salt and black pepper
🥣 Method:
1. Preheat the oven to 180C. Put the potatoes in a pan of cold water with a large pinch of salt. Place over medium heat and bring to the boil. Simmer until the potatoes begin to soften and you can pierce with a fork and feel no resistance. This usually takes 20-25 minutes. Drain and allow to dry in the colander.
2. While the potatoes are cooking, place the olive oil, garlic, salt and black pepper in a small bowl and whisk until combined. Place the drained, dried potatoes on a baking tray with the garlic dressing. Place into the preheated oven for 25 minutes.
3. Place the carrots and broccoli onto a baking tray, drizzle olive oil and season with salt, black pepper, dried herbs and, bake for 25 minutes.
4. To make the dressing, add the Original Lummus, olive oil and apple cider vinegar into a bowl and season with salt and black pepper.
5. To assemble the dishes, spread the original dressing onto a serving dish, top with the roasted veggies and potatoes, sprinkle with some fresh coriander and season to taste.
