Lupin Mediterranean Salad

🍴 Serves : 4

🍳 Ingredients :
2 packs of your Marinated Lupins of choice
1 cucumber, diced
250g cherry tomatoes or 1 medium tomato, diced
1/2 red onion, diced

🍶 For the dressing:
2 tbsp olive oil
Pinch of salt
Black pepper, cracked
Dried herbs (Thyme, oregano)


🥣 Method :
1. Whisk together the olive oil, dried herbs, salt, and pepper in a small bowl.
2. To a large bowl, add the tomatoes, cucumber, onion and the dressing. Toss gently.
3. Taste and adjust the seasoning to your liking and serve immediately.
