Avo Toast with Lummus & Beets

šŸ³Ā Ingredients:
1 or 2 slices of whole wheat bread, toasted
1/2 avocado, mashed
2 eggs
1 heaped tbsp Lummus & Beets
1/2 lemon juice
Pinch of salt
Black pepper


šŸ„£Ā Method:
1. Cook one egg at a time. Crack an egg into a non-stick pan, and cook over medium heat and to your liking.
2. Smash the avocado with a fork. Season with lemon juice, salt, and pepper, to taste.
3. Spread the Lummus on each piece of toast. Add a layer of smashed avocado. If desired, top with cooked eggs and season with additional salt and pepper. Serve immediately.
