Veggie crepioca with lummus

Ingredients:
1/4 courgette, grated
1/2 small carrot, grated
2 tablespoons hydrated tapioca
1 tablespoon More than Protein Pure
2 eggs
salt and black pepper
2 tablespoons Basil Lummus
🥣 Preparation:
1. Start by grating the courgette and carrot. Set aside.
2. In a bowl, combine the eggs, tapioca and protein powder. Mix well with a fork until smooth.
3. Add the grated courgette and carrot, season with salt and black pepper, and mix again.
4. Heat a non-stick frying pan over medium heat and, if necessary, add a drizzle of olive oil.
5. Pour the mixture into the frying pan and spread it out to form a thin layer.
6. Cook for 2 to 3 minutes on each side, until the crepioca is firm and golden brown.
7. Remove from the heat, fill with the Basil Lummus and fold in half.
8. Serve while still warm — perfect for a quick, healthy and flavourful meal! 🌿
