Vegan Orange Sponge Cake by Maria Verde em Poupa
We challenged Maria to create a special recipe for this festive season... and she came up with a real winter treat 🎄✨
A super fluffy, aromatic and irresistible vegan orange sponge cake, made with our Vanilla Protein to give it that extra protein boost, without altering the flavour and without losing any of the traditional magic 🍊💛
Ingredients:
- 2 + 3/4 cups spelt flour
- 1/4 cup vanilla protein (tarwi)
- 3 tablespoons cornflour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/4 cup orange juice
- 1 cup soy milk
- 1/2 cup olive oil
- 1/2 cup agave syrup
- Orange zest
- 1 tablespoon lemon juice
Preparation:
- Preheat the oven to 180ºC and grease a ring cake tin.
- In a bowl, mix the sifted dry ingredients and, in another, the liquids.
- Add the liquids to the dry ingredients, mix until smooth and pour into the tin.
- Bake until golden brown.
