Tofu Patties with Vegetable Protein

Rich in vegetable protein and full of flavour, they are ideal for taking in your lunchbox, combining with different side dishes, or even storing in the freezer for those days when you are short on time. ⏱️

🍴 Serves: 9 fritters

Ingredients:

  • 300g firm tofu
  • 1 small onion, chopped
  • 1 tsp garlic powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon sweet paprika
  • salt and black pepper to taste
  • 1 sheet of nori seaweed, cut into pieces
  • 1 dessert spoon of soy sauce
  • 2 tablespoons of Protein: Unflavoured 
  • 50 ml vegetable drink of your choice 
  • olive oil to taste

🥣 Preparation:
1. Start by grating the tofu and placing it in a bowl. Add the chopped parsley, onion, seasonings, soy sauce, nori seaweed and unflavoured protein powder. Mix all the ingredients well.
2. Gradually add the vegetable drink until you obtain a mouldable consistency. Then, form small patties with your hands. If necessary, add a little more protein powder or vegetable drink until you obtain a mouldable texture.
3. Heat a frying pan with a drizzle of olive oil and cook the patties until golden brown on both sides. 


Tip: serve with rice, pasta, salad or sautéed vegetables for your lunchboxes and freeze any leftovers to use on other days.
