High Protein Soup

Cozy soup season calls for.. a cozy soup 🍲 The marinated lupins give it a creamy texture & add plant protein, turning this soup into a hearty dish 🤗

🕒 Time: 55 min
🍴 Serves: 2 portions

🗒️ Ingredients:
1 medium white onion
2 shallots
3 small carrots (finely chopped)
1 clove of garlic
500 gr butternut squash
3 celery sticks (finely chopped)
1 tsp rosemary
1 litre vegetable stock
2 Tarwi Marinated Lupins Sea Salt (140 gr)
drizzle olive oil
pinch of sea salt & black pepper

🍽️ to serve:
a few marinated lupins
coriander leaves
drizzle olive oil
slice of toasted bread

🥣 Method:
1. Place a large heavy-bottomed saucepan over medium-high heat and add a drizzle of olive oil. Add the onions, garlic. Cook, stirring frequently for 4-5 minutes, until softened and reduced.
2. Add the celery, carrots, pumpkin and vegetable stock. Bring to a simmer. Leave to bubble gently, stirring occasionally for 30-35 minutes, until the pumpkin can easily be pierced with a fork.
3. Add the marinated lupins and hand blend the soup, until smooth and creamy. Serve with more marinated lupins, coriander leaves and a drizzle of olive oil.
