Good morning fam 🤩 starting the weekend with this BEAUTIFUL recipe - protein carrot cake breakfast bars 🥕🧁

🍴 Serves: 1 cake

🥕 Ingredients:
2 bananas (mashed)
150 gr oats flakes
80 gr walnuts (extra to sprinkle)
60 gr grated coconut
1/2 tsp ginger powder
1/4 tsp nutmeg
1 tsp cinnamon powder
20 gr agave syrup (optional)
200 gr carrots (peeled & grated)
2 tbsp Tarwi More Than Protein: Vanilla
150 ml milk of your choice
pinch of salt

🧁 For the topping:
200 gr yoghurt of your choice
60 gr cashews (soaked)
2 tbsp Tarwi More Than Protein: Vanilla
2 tbsp lemon juice
1/2 tbsp agave syrup (optional)
1/2 tsp vanilla extract

🥣 Method:
1. Grease and line a square cake tin. Place the mashed bananas, coconut, oats, walnuts, spices, grated carrots, agave and milk into the tin and mix. Then add the protein powder and stir to combine. If needed add a bit more milk until you have a cake consistency batter.
2. Bake for 40-45 minutes, until risen, dark golden brown and a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool completely on a wire rack (tip the cake out of the tin once it’s cool enough to handle).
3. To make the icing, add the soaked cashews, yoghurt, agave syrup, lemon juice, protein powder and vanilla and blend everything using a high-speed blender. Spread over the cake and sprinkle over the remaining walnuts.
